  • 1 1/2 cup fresh spinach, torn with larger stems removed
  • 1/2 onion chopped
  • 1/4 bell pepper chopped
  • 1/2 tbsp olive oil
  • 1 1/2 cup Sargento 6 Cheese Italian Blend
  • 2 eggs
  • 1 cup evaporated milk
  • 1/2 tsp pepper
  • 1/4 tsp nutmeg
  • 1 tsp kosher salt
  • 1/4 tsp smoked paprika
  • 1 9-inch deep dish prepared pie crust

    preheat oven to 350

    sautee spinach, bell pepper, and onion in olive oil and set aside.
  3. 3
    combine eggs, milk and spices with the exception of the smoked paprika.

    place 1/2 of shredded cheese in the bottom of the pie crust.

    layer the sauteed spinach mixture on top of the cheese
  6. 6
    place the remaining cheese on top of the spinach.

    pour the egg mixture over the top of the layers, and sprinkle the smoked paprika over the top.

    if you have a pie crust shield, place over crust and bake for 40 minutes or until quiche center is firm.
