  • 1 (9-inch) baked pie shell
  • 3 eggs
  • enough milk to make 1 1/2 c. with the eggs
  • 1 Tbsp. dried onion
  • 1/2 c. shredded Monterey Jack cheese
  • 1/2 c. shredded Cheddar cheese
  • 1 (10 oz.) frozen spinach, thawed and drained well
  • nutmeg

    Beat eggs.

    Add enough milk to make 1 1/2 cups.

    Add dried onion.

    Drain spinach well.

    Spread in bottom of baked pie shell. Sprinkle with cheeses.

    Sprinkle with nutmeg.

    Bake at 350° for 30 to 40 minutes or until knife inserted in center comes out clean.
