- 1 (9-inch) unbaked deep dish pie shell
- 1 small onion, chopped
- 2 Tbsp. melted margarine
- 1 (10 oz.) pkg. frozen spinach, thawed or cooked fresh spinach
- 2 Tbsp. all-purpose flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. ground nutmeg
- 2 eggs, beaten
- 1 c. half and half
- 2 Tbsp. Parmesan cheese
Directions

1Bake pie shell at 400° for 5 minutes.

2Set aside.

3Saute onion in butter; add spinach, stirring well.

4Cook 2 minutes.

5Blend flour, salt, pepper and nutmeg.

6Add to spinach.

7Combine eggs, half and half and cheese.

8Add to spinach mixture.

9Pour into pie shell and bake at 400° for 35 to 40 minutes.
