  • 1 (9-inch) unbaked deep dish pie shell
  • 1 small onion, chopped
  • 2 Tbsp. melted margarine
  • 1 (10 oz.) pkg. frozen spinach, thawed or cooked fresh spinach
  • 2 Tbsp. all-purpose flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. ground nutmeg
  • 2 eggs, beaten
  • 1 c. half and half
  • 2 Tbsp. Parmesan cheese

    Bake pie shell at 400° for 5 minutes.

    Set aside.

    Saute onion in butter; add spinach, stirring well.

    Cook 2 minutes.

    Blend flour, salt, pepper and nutmeg.

    Add to spinach.

    Combine eggs, half and half and cheese.

    Add to spinach mixture.

    Pour into pie shell and bake at 400° for 35 to 40 minutes.
