Ingredients
- 2 Tbsp. unsalted butter
- 1/4 c. chopped onion
- 2 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
- 1/2 tsp. salt
- 1/4 tsp. ground white pepper
- pinch of nutmeg
- 4 eggs
- 1 c. half and half
- 1 c. heavy cream
- 1/2 c. grated Swiss cheese or Monterey Jack cheese
- 2 (9-inch) pie shells
- crisp-fried bacon
- sauteed mushrooms
- chopped tomatoes
Directions

1Melt butter in a large skillet.

2Saute onions over medium heat until soft, about 5 minutes.

3Add spinach and continue to cook, stirring often, until no liquid is left.

4Add salt, pepper and nutmeg.

5Stir well and allow to cool.

6Preheat oven to 375°.

7Beat eggs and cream together; gradually add to spinach mixture.

8Stir until smooth.

9Add cheese and combine.

10Pour mixture into pie shells.

11Place shells on cookie sheet and bake 30 to 35 minutes or until a knife inserted into pie comes out clean.

12Serve hot or room temperature.
