Spinach Quiche

  • 1/2 c. margarine, melted
  • 10 eggs
  • 1/2 c. flour
  • 1 tsp. baking soda
  • 1 (10 oz.) pkg. frozen, chopped spinach, thawed
  • 1 (8 oz.) can green chilies, seeded
  • 2 c. cottage cheese
  • 8 oz. grated Cheddar cheese and Monterey Jack cheese

Directions

    Preheat oven to 400°.

    Place margarine in a 9 x 13-inch pan and melt in heated oven.

    Place eggs, green chilies, soda, spinach (squeeze spinach dry) and flour in a blender and blend.

    In separate bowl, place grated cheeses and add egg mixture; stir well. Add margarine and pour into pan.

    Bake 15 minutes at 400°, then reduce heat to 350° and bake an additional 30 to 40 minutes.

    Let stand for 5 minutes before serving.
