  • 6 c. chopped fresh spinach
  • 1/2 c. butter
  • 4 Tbsp. flour
  • 4 eggs, beaten
  • 2 c. heavy cream
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. grated Swiss cheese
  • 2 (9-inch) pie crusts

    Saute spinach in butter until limp.

    Stir in flour and cook 5 minutes.

    Remove from heat.

    Combine eggs, cream, salt and pepper and mix well.

    Stir in cheese and spinach.

    Pour into pastry shells and bake at 375° for 30 to 35 minutes.
