- 1 unbaked 9-inch pie crust
- 10 oz. frozen spinach
- 1 lb. Velveeta cheese
- 2 Tbsp. margarine
- 2 eggs, beaten
- 3/4 c. half and half
- salt to taste
Directions

1Thaw and drain spinach.

2In a saucepan, cook spinach and cheese in margarine until cheese melts.

3Add remaining ingredients.

4Pour into pie shell and bake at 350° for 45 minutes or until set.

5For thicker quiche, use 20 ounces frozen spinach and 3 eggs.

6Serves 6 to 8.
