Spinach Quiche-Gourmet

Ingredients

  • 1 (10-inch) unbaked pie shell
  • 1 (9 oz.) pkg. creamed spinach
  • 2 tsp. chopped onions
  • 1/8 tsp. black pepper
  • 1/16 tsp. red pepper
  • 1/16 tsp. nutmeg
  • 4 eggs, lightly beaten
  • 1 1/2 c. light cream (skim evaporated milk may be used)
  • 1/4 c. crumbled crisp bacon
  • 1/2 c. grated Swiss cheese (light or low-fat cheese may be used)

Directions

    Bake pie shell (prick all over with fork) in 350° oven until set but not brown.

    While pastry bakes, prepare spinach according to package directions.

    Empty into deep bowl; allow to cool slightly.

    Stir in onions, seasonings, eggs and cream.

    Pour into hot pie shell.

    Sprinkle bacon and cheese on top.

    Bake at 350° until knife comes out clean, 40 minutes.

    May be further browned under broiler a few minutes, if desired.
