Spinach Quiche(Makes 2 Quiches)

- 2 frozen pie shells
- 2 (10 oz.) pkg. frozen chopped spinach
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1 Tbsp. oil
- 1/2 tsp. dried dill
- 4 oz. soft cream cheese
- 16 oz. pkg. Ricotta or Feta cheese
- 1 1/2 c. grated Mozzarella
- 4 eggs
Directions

1Precook pie shells according to directions and set aside. Thaw spinach and set aside.

2Saute onion and garlic in butter until soft. Place in food processor the spinach, onion, garlic, cream cheese, Ricotta, Feta and 1/2 cup Mozzarella.

3Pulse 2 to 3 times.

4Add eggs and dill; pulse to mix.

5Do not overblend. Divide into 2 pie shells; top with 1/2 cup Mozzarella each.

6Bake at 350° for 45 minutes, until puffed and golden.
