  • 6 large eggs
  • 2 cups cottage cheese
  • 10 ounces frozen spinach, thawed and drained
  • 1 14 cups cooked quinoa
  • 1 cup chopped green onion
  • 1 cup crumbled feta cheese
  • 18 teaspoon black pepper

Directions

    Preheat oven to 350.

    In blender, combine eggs and cottage cheese.

    Puree until smooth.

    Transfer to a medium bowl and stir in spinach, green onions, quinoa, feta and pepper.

    Spread into glass baking dish sprayed with cooking spray.

    Bake for 35-40 minutes or until golden brown and set.
