  • 1 green pepper, diced
  • 1 large onion, diced
  • 1/2 lb. Velveeta cheese, diced
  • 1/2 c. milk
  • 1 c. raw rice, cooked
  • 1 stick oleo
  • 1 egg

    Fry pepper and onion in oleo until tender; do not brown. Cook rice until tender. Add corn, onion and pepper; mix in milk and egg, then cheese. Bake in casserole until bubbly at 350° for 30 minutes.
