- 1/4 cup olive oil
- 2 medium onions chopped
- 10 ounces bay leaves frozen
- 1 each spinach defrosted
- 1 cup water
- 1/4 cup rice uncooked
- 1 x salt and black pepper to taste
Directions

1Saute onions in oil until golden.

2Add spinach and water; bring to a boil.

3Add rice, season with salt and pepper; stir.

4Cover and cook over low heat for 15 to 20 minutes, until rice is tender.
