  • 1 vegetable bouillon cube
  • 1 1/2 cups brown rice (see note)
  • 2 tablespoons nonhydrogenated margarine
  • One 10-ounce package frozen chopped spinach, thawed
  • 1 to 2 scallions, thinly sliced
  • Salt and freshly ground pepper to taste

Directions

    Bring 4 cups water to a simmer with the bouillon cube in a medium saucepan.

    Stir in the rice, cover, and simmer gently until the water is absorbed, about 35 minutes.

    Stir in the remaining ingredients and continue to cook just until everything is heated through.
