Spinach Salad

Ingredients

  • 1/2 lb. spinach, washed and drained
  • 1/2 lb. bacon, cooked crisp and drained
  • onions, sliced thin
  • 1/2 to 1 head iceberg lettuce, broken into pieces
  • 1 pkg. frozen green peas
  • 6 eggs, hard-boiled and sliced
  • mayonnaise
  • 1/2 lb. Swiss cheese, grated

Directions

    In a straight sided glass bowl, layer spinach in bottom. Sprinkle with salt, pepper and sugar.

    Crumble bacon over spinach and add a layer of onion slices.

    Cover with a layer of iceberg lettuce.

    Sprinkle with salt, pepper and sugar.

    Cover with a layer of frozen peas, then a layer of hard-boiled eggs.

    Cover with thick layer of mayonnaise, being careful to seal the edges. Sprinkle with grated cheese.

    Cover and refrigerate overnight.
