Ingredients
- 1 medium onion, minced
- 1 c. chopped celery
- 2 Tbsp. butter
- 1/4 c. flour
- 2 chicken bouillon cubes
- 3 c. water
- 2 small carrots, sliced
- 1/2 frozen peas
- salt and pepper
- 2 (12 oz.) cans evaporated milk
- 1 1/2 to 2 c. shredded American cheese
Directions

1Saute onion and celery in butter about 5 minutes.

2Do not brown.

3Add carrots, bouillon and water.

4Boil until carrots are tender.

5Add peas.

6Make a paste of flour and a little water.

7Add to soup while stirring and simmer for 10 to 15 minutes.

8Add milk and cheese.

9Heat, stirring frequently, but do not boil.

10Season with salt and pepper.

11Serve with crackers.
