  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. olive oil
  • 1 Tbsp. vinegar
  • 1 lb. fresh spinach and radicchio
  • 1 red bell pepper, chopped
  • 2 small carrots, thinly sliced
  • 1 pt. cherry tomatoes, halved
  • 4 oz. chopped walnuts

Directions

    Shake mustard, olive oil and vinegar in tightly covered container.

    Divide into four parts and arrange on heat-proof dishes.

    Top each with red pepper, carrots, tomatoes and nuts. Top with your favorite grated cheese and warm in 425° oven until cheese begins to melt.
