- 1 1/2 lb. fresh spinach
- 2 boiled eggs
- 6 slices lean bacon
- 1/3 c. corn oil
- 1 tsp. minced garlic
- 1/4 c. red wine vinegar
- 1/4 c. chopped, fresh parsley
Directions

1Pick over the spinach and remove any tough stems and blemished leaves.

2Tear into small pieces.

3Fry the bacon until crisp and crumble.

4Slice the boiled eggs.

5Place the spinach in a serving bowl and top with the sliced eggs.
