Ingredients

  • 1/2 c. vegetable oil
  • 1/4 c. vinegar
  • 3 Tbsp. lemon juice
  • 1 clove garlic, crushed
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • dash of pepper
  • 6 slices cooked bacon, crumbled
  • 1 lb. fresh spinach, torn into bite size
  • 2 hard-cooked eggs
  • 3 purple onions
  • fresh sliced mushrooms

Directions

    Combine oil, vinegar, lemon juice, garlic, sugar, salt and pepper.

    Bring to a boil; let cool, then place in a jar and refrigerate.

    Combine spinach, eggs, mushrooms, bacon and purple onion; toss.

    Shake dressing vigorously before pouring over salad. Add croutons, if you like.
