- 1 clove garlic, cut in large pieces
- 1/2 tsp. salt
- 1/2 c. salad oil
- 1/4 c. cider vinegar
- 3 tsp. lemon juice
- about 4 hard-boiled eggs
- 1 lb. spinach
- crisp, crumbled bacon
Directions

1Put garlic and salt in salad oil for 1 hour.

2Mix together the cider vinegar and lemon juice.

3Remove garlic clove from oil (if desired) and gradually add vinegar mixture to oil and beat until frothy.

4Mix in 4 hard-boiled eggs to a pound of spinach.

5Add generous amount of crisp, crumbled bacon.

6Use fresh spinach only. Wash very thoroughly to eliminate sand and cut off stems.

7One pound of spinach serves 8 to 10 people.
