Spinach Salad

  • 1 (10 to 12 oz.) bag fresh spinach
  • 1/2 lb. mushrooms
  • 1 small onion
  • 1/2 c. olive oil
  • 1/4 c. white vinegar
  • 1 tsp. crushed basil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

    Mix oil, vinegar, basil, salt and pepper.

    Thinly slice mushrooms and onion; add to first mixture.

    Refrigerate for at least 1/2 hour.

    Wash and tear spinach in pieces; drain well and put into salad bowl.

    When ready to serve, add mushrooms and oil mixture to spinach and toss.
