- 6 slices bacon
- 1/4 c. wine vinegar
- 2 Tbsp. water
- 1/4 tsp. fresh ground pepper
- 1/4 tsp. dry mustard
- 1 lb. fresh spinach
- 4 green onions, diced
- 1 hard-cooked egg, grated
- sugar to taste
Directions

1Cook bacon until crisp.

2Cool on paper towel; crumble when cool.

3Add the next 4 ingredients to bacon drippings; blend well. Cook on high until mixture boils.

4Add sugar if desired.

5Remove stems and tear spinach in medium size pieces.

6Combine with diced onions in large bowl.

7Pour hot dressing over top of spinach; toss lightly.

8Sprinkle with grated egg and crumbled bacon.

9Serve immediately.
