Ingredients

  • 6 slices bacon
  • 1/4 c. wine vinegar
  • 2 Tbsp. water
  • 1/4 tsp. fresh ground pepper
  • 1/4 tsp. dry mustard
  • 1 lb. fresh spinach
  • 4 green onions, diced
  • 1 hard-cooked egg, grated
  • sugar to taste

Directions

    Cook bacon until crisp.

    Cool on paper towel; crumble when cool.

    Add the next 4 ingredients to bacon drippings; blend well. Cook on high until mixture boils.

    Add sugar if desired.

    Remove stems and tear spinach in medium size pieces.

    Combine with diced onions in large bowl.

    Pour hot dressing over top of spinach; toss lightly.

    Sprinkle with grated egg and crumbled bacon.

    Serve immediately.
