Spinach Salad

Ingredients

  • 1 package baby spinach
  • 1/2 orange bell pepper
  • 1/2 yellow bell pepper
  • 1/2 pint cherry tomatoes
  • 4-6 button mushrooms (optional)
  • 2-3 green onions (optional)
  • 1-2 grilled chicken breasts (or sauteed tofu)

Directions

    While chicken is cooking (grilled or pan fried with olive or coconut oil and a pinch of himalayan salt), rinse all veggies and dry spinach.

    Dice onions, mushrooms, toms and peppers.

    When chicken is fully cooked, drain any excess olive oil, and slice to bite sized pieces.

    In a large glass bowl, add spinach along with veg and chicken.

    Drizzle ranch dressing on.

    Season with ground black pepper if you like, and enjoy!
