- fresh tender spinach leaves
- vinegar
- watercress
- 8 strips bacon
- 4 Tbsp. sugar
- 4 Tbsp. wine vinegar
- 1/2 oz. Lea & Perrins Worcestershire sauce
- 1 lemon
- cognac
Directions

1Remove stems from spinach.

2Clean in cold water with a little vinegar, then dry the leaves.

3Place dry spinach leaves and watercress in a salad bowl.

4Cut bacon in 1/2-inch squares and fry until crisp.

5Add sugar, wine vinegar and Lea & Perrins.

6Heat to a boil and stir in dressing over spinach leaves, leaving bacon in skillet.

7Squeeze lemon over leaves, then toss until wilted. Drain dressing off salad and place spinach on plate.

8Add cognac to bacon, ignite and spoon over spinach leaves at once.
