Spinach Salad Pizza

- 1 cup Grape Tomatoes
- 2 teaspoons Olive Oil
- 1/2 teaspoons Kosher Salt
- 1/2 teaspoons Freshly Ground Black Pepper
- 4 whole 6-Inch Round Tortillas
- 1 Tablespoon Olive Oil
- 4 ounces, weight Pancetta, Chopped
- 1 cup Yellow Onions, Sliced
- 1 cup Baby Portabella Mushrooms, Sliced
- 2 cups Fresh Baby Spinach Leaves
- 4 ounces, weight Goat Cheese Crumbles
- 1/2 cups Pecan Halves
- Chianti Vinaigrette Or Another Favorite Vinaigrette, To Taste For Drizzling On Top Of The Pizzas (See Note)

1Preheat the oven to 400 F. Spread the tomatoes in an even layer on a small baking sheet.

2Drizzle with olive oil and sprinkle with salt and pepper.

3Stir to evenly coat.

4Roast in the oven for 15 minutes or until the tomatoes begin to wilt.

5Then remove from the oven and set aside.

6Lay the tortillas out onto a large baking sheet.

7Divide the tablespoon of olive oil evenly among the tortillas and spread evenly with a pastry brush.

8Bake them in the 400 F oven for about 10 minutes, until lightly browned and crisp.

9Remove from the oven and set aside.

10Meanwhile, heat a small skillet over medium heat.

11Add the pancetta and cook, stirring frequently, until the pancetta is crisp and the fat is rendered.

12Remove the pancetta from the skillet and set aside, reserving the drippings in the pan.

13To the pancetta drippings, add the onions and a pinch of salt.

14Cook on medium-low heat for 15-20 minutes or until caramelized and very soft.

15While the onions are cooking, heat a small saucepan over medium heat.

16Add 1 teaspoon of olive oil, and the mushrooms.

17Saute for 5 minutes, until the mushrooms begin to soften.

18Remove from heat and set aside.

19To assemble the pizzas: Lay about 1/2 cup baby spinach leaves on top of the crisped tortillas.

20Top each with 1/4 of each: cooked pancetta; cooked mushrooms; caramelized onions; roasted tomatoes; goat cheese and pecans.

21Lightly drizzle the dressing on top and cut into slices with a pizza cutter.

22Notes: I buy the Chianti vinaigrette from a local pizza place.

23If you cant find something similar in the store or a restaurant near you, any vinaigrette will do.

24Just use your favorite dressing for spinach salads.

25I think that even a simple drizzle of good balsamic vinegar and olive oil would be perfect with this pizza.

26I decided to make this pizza on crisped tortillas because I wanted a very thin and crispy crust.
