  • 250 g frozen spinach, thawed
  • 1 medium onion, finely chopped or grated
  • 1 cup self raising flour
  • 1 cup reduced-fat cheddar cheese
  • 5 egg whites
  • 12 cup olive oil
  • 1 teaspoon mixed herbs
  • salt and pepper

    Heat oven to 180C.

    Grease a 20x15 cm baking dish.

    Combine all ingredients and mix to form a batter.

    The batter should be spreadable rather than pourable.

    Alter the consistency with additional flour if too wet; with oil if too dry.
