  • 2 pkg. frozen chopped spinach, cooked and drained
  • 3 eggs, beaten well
  • 4 Tbsp. flour
  • 1/4 c. butter, melted
  • 1/4 lb. Velveeta
  • 1/4 lb. mild Cheddar, grated
  • 1 lb. small curd cottage cheese or Ricotta cheese
  • salt and pepper to taste

    Mix spinach, eggs and butter.

    Fold in flour and cheeses.

    Mix well and place in buttered baking dish.

    Bake at 350° for 30 minutes.
