  • 1 (10 oz) package frozen chopped spinach
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 3 eggs
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 1 cup milk
  • 1 cup freshly grated Parmesan or Romano cheese

Directions

    Drain spinach well. Press between paper towel to remove excess liquid.

    Melt butter in large skillet over medium heat. Add onions and garlic; saute until onions are tender.

    Remove from heat and stir in spinach; cool.

    Whisk eggs, flour, salt, pepper and nutmeg in large bowl. Whisk in milk and cheese. Stir in spinach mixture. Pour into lightly greased 8 inch square baking dish.

    Bake at 350 deg for 33 minures or until set. Let stand 5 minutes before serving.
