- 1 pkg. chopped spinach
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 3 c. boiling chicken broth
- 2 egg yolks
- 2 Tbsp. butter
- 1/4 c. grated Parmesan cheese
Directions

1Cook spinach for 4 minutes; drain.

2Melt butter in saucepan. Add spinach, salt and pepper.

3Saute over low heat for 2 minutes, stirring constantly.

4Beat egg yolks with cheese; add to the spinach.

5Gradually add broth, stirring constantly; bring to a boil.

6(The eggs will curdle; don't worry.)

7Serve with croutons.
