Spinach Soup (Danish)

- 2 lb. fresh spinach
- 3 1/2 pt. chicken broth
- 1 1/2 oz. butter
- 2 Tbsp. flour
- 1 tsp. salt
- 1/2 tsp. nutmeg
- 1 tsp. white pepper
- 2 hard-boiled eggs
Directions

1Add the spinach washed and chopped to the boiling stock. Simmer for 6 to 8 minutes.

2Grind the whole thing in blender. Melt 1 1/2 ounces of butter in saucepan; remove the pan and stir flour in it.

3With a wire whisk, beat the spinach into the saucepan; bring it to a boil.

4Season the soup with salt, pepper and nutmeg.

5Simmer for 5 minutes and stir occasionally.

6Garnish each serving with a few slices of hard-boiled eggs.
