Spinach Soup (Danish)

  • 2 lb. fresh spinach
  • 3 1/2 pt. chicken broth
  • 1 1/2 oz. butter
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/2 tsp. nutmeg
  • 1 tsp. white pepper
  • 2 hard-boiled eggs

Directions

    Add the spinach washed and chopped to the boiling stock. Simmer for 6 to 8 minutes.

    Grind the whole thing in blender. Melt 1 1/2 ounces of butter in saucepan; remove the pan and stir flour in it.

    With a wire whisk, beat the spinach into the saucepan; bring it to a boil.

    Season the soup with salt, pepper and nutmeg.

    Simmer for 5 minutes and stir occasionally.

    Garnish each serving with a few slices of hard-boiled eggs.
