Ingredients
- 1 (9 to 10 oz.) pkg. frozen onions in cream sauce
- 1 (10 oz.) pkg. frozen chopped spinach
- 2 slightly beaten eggs
- 1 c. sour cream
- 1/2 c. butter, melted
- 1/4 tsp. salt
- 1 (8 1/2 oz.) pkg. corn muffin mix
- 1/2 c. shredded Cheddar or Swiss cheese
Directions

1Prepare onions according to package.

2Set aside.

3Cook spinach. Drain well.

4In large bowl, mix onions, eggs, spinach, sour cream, butter and salt.

5Stir in corn muffin mix.

6Pour mixture into greased 1 1/2-quart casserole.

7Bake at 350° for 30 to 35 minutes or until toothpick comes out clean.

8Sprinkle top of cornbread with cheese and bake 2 more minutes until cheese is melted.

9Serve warm.
