Spinach Stuffed Shells

  • 10 oz. pkg. frozen chopped spinach, thawed and well drained
  • 1/2 c. Ricotta cheese (low-fat)
  • 2 oz. Mozzarella cheese (part-skim), shredded (about 1/2 c.)
  • 1 egg white, lightly beaten
  • 1 Tbsp. Parmesan cheese, grated
  • 1/8 tsp. each nutmeg and pepper
  • 4 oz. jumbo pasta shells (16)
  • 2 c. marinara sauce

    Prepare marinara sauce.

    Preheat oven to 350°.

    Cook pasta shells according to label.

    Mix remaining ingredients.

    Fill each shell with mix (about 1 tablespoon per shell) and place in baking dish lined with sauce.
