Spinach Supreme

Ingredients

  • 1 c. chopped onion
  • 1/2 c. bell pepper, chopped
  • 1 c. celery, chopped
  • 1/2 stick oleo
  • 2 pkg. frozen chopped spinach
  • 1 can cream of mushroom soup
  • 6 oz. Velveeta cheese, diced
  • 2/3 to 1 c. bread crumbs

Directions

    Saute onion, bell pepper and celery in oleo until clear and cooked.

    Separately cook spinach according to box directions. Squeeze and drain excess water.

    Add soup and cheese to sauteed vegetables.

    Stir until melted.

    Season with salt, pepper and garlic powder.

    Add spinach and bread crumbs and mix well.

    Bake, uncovered, in casserole dish.

    Sprinkle additional bread crumbs on top.

    Bake at 350° for 45 minutes to 1 hour.

    Freezes well.
