Spinach Supreme Frittata

Ingredients

  • 1/2 c. finely chopped onions
  • 2 Tbsp. butter or margarine
  • 1 pkg. (10 oz.) frozen chopped spinach
  • 1 clove garlic, crushed
  • 3 c. cooked rice
  • 1/2 c. grated Parmesan cheese
  • 4 eggs, slightly beaten
  • 1/2 c. milk
  • 2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 c. grated Cheddar cheese

    In a large skillet cook onions in butter until tender but not brown.

    Add spinach and garlic.

    Cover and cook 4 to 5 minutes. Remove from heat; add cooked rice and Parmesan cheese.

    Mix well. Combine eggs, milk, salt and pepper.

    Stir into rice mixture. Turn into well buttered shallow 2-quart casserole.

    Top with Cheddar cheese.

    Bake at 350° for 30 to 40 minutes or until set. Makes 6 servings.
