  • 2 envelopes Knox unflavored gelatine
  • 1 can condensed beef broth
  • 1/4 c. water
  • 1/2 tsp. salt
  • 2 Tbsp. lemon juice
  • 1 c. Miracle Whip salad dressing
  • 1 (10 oz.) pkg. frozen spinach
  • 1/4 c. chopped green onions
  • 4 hard-boiled eggs, chopped
  • 1/2 lb. crispy bacon
  • pimento strips

Directions

    Soften gelatine in beef broth.

    Stir over low heat until dissolved.

    Stir in salt, water and lemon juice.

    Gradually add gelatine to Miracle Whip and mix until well blended.

    Chill until slightly thickened.

    Fold in spinach, onion, eggs and bacon.

    Pour into 1 1/2-quart mold.

    Chill until firm.

    Garnish with pimento strips.
