- 1/2 c. whole wheat bread crumbs
- 2 lb. fresh spinach
- 1 Tbsp. butter or safflower oil
- 1/2 onion, chopped fine
- 1 clove garlic, minced
- 3/4 c. grated Gruyere cheese
- 1/2 c. grated Parmesan cheese
- sea salt and pepper
- 4 eggs, beaten
- 1 c. milk
- pinch of nutmeg
Directions

1Preheat oven to 325°.

2Butter a souffle dish and dust with 1/4 of bread crumbs.

3Wash spinach and remove stems. Wilt in a dry frying pan.

4Rinse under cold water; squeeze dry in a towel. Chop fine.
