  • 1 Tablespoon Olive Oil
  • Small Onion finely chopped
  • 1/2 tsp. Basil & Oregano
  • pinch crushed red pepper
  • 1 28 oz can Crushed Tomatoes
  • 1 package frozen spinach, thawed, squeezed dry and roughly chopped
  • 1 1/2 pint Light Cream or Whipping Cream
  • Chicken Broth to thin soup
  • Salt & Pepper to taste

Directions

    Saute onion, add spices and tomatoes, simmer a few minutes. Add spinach and cream. Stir in chicken broth to thin to soup consistency. Simmer until hot - do not boil soup.
