- 1 teaspoon olive oil
- 2 cloves garlic, minced
- 2 teaspoons fresh lemon juice
- 1 teaspoon lemon, zest of
- salt & pepper
- 1 1/2 lbs fresh spinach, qashed,stems removed
Directions

1Heat the oil in a large pan or wok and saute the garlic until golden.

2Turn heat to medium and add the lemon juice, zest, salt& pepper& spinach.

3Stir the spinach until barely wilted.

4Serve immediately, lifting the spinach out with tongs.

5Leave the liquid behind.

6Check your seasoning.
