- 4 teaspoons pine nuts
- 1 teaspoon olive oil
- 2 (7-ounce) packages fresh baby spinach
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup raisins
Directions

1Place pine nuts in a large nonstick skillet over medium-high heat. Cook, stirring frequently, 3 minutes or until lightly toasted. Remove from pan, and set aside.

2Heat oil in same pan over medium-high heat. Add spinach and garlic; cook, stirring occasionally, 3 to 4 minutes or just until spinach wilts. Sprinkle with salt and pepper; add pine nuts and raisins. Toss well.
