Split Pea Casserole

- 1 c. split peas or lentils
- 1 lb. hamburger
- 1 chopped onion
- 1/2 tsp. salt
- other seasonings (as desired)
- 3 c. whole tomatoes
- 3 to 4 diced carrots
- 3 to 4 diced celery stalks
Directions

1Simmer split peas in 1 quart water for 1/2 to 3/4 hour, until tender.

2Drain.

3Make Sloppy Joe by frying together hamburger and onion.

4Add salt and other seasonings.

5Mix in whole tomatoes. Add carrots, celery and drained peas.

6Mix all together.

7Bake in a covered casserole dish at 350° for 1 1/2 hours.

8Serves 6 to 8.
