Split Pea Casserole

Ingredients

  • 1 c. split peas or lentils
  • 1 lb. hamburger
  • 1 chopped onion
  • 1/2 tsp. salt
  • other seasonings (as desired)
  • 3 c. whole tomatoes
  • 3 to 4 diced carrots
  • 3 to 4 diced celery stalks

    Simmer split peas in 1 quart water for 1/2 to 3/4 hour, until tender.

    Drain.

    Make Sloppy Joe by frying together hamburger and onion.

    Add salt and other seasonings.

    Mix in whole tomatoes. Add carrots, celery and drained peas.

    Mix all together.

    Bake in a covered casserole dish at 350° for 1 1/2 hours.

    Serves 6 to 8.
