  • 9 oz. yellow split peas, soaked overnight
  • 15 oz. canned tomatoes, with liquid reserved
  • 1/4 cup salad oil
  • 1 clove garlic
  • Salt
  • Pepper
  • 1 dash cayenne

Directions

    Drain peas, then boil in fresh unsalted water fo 30 minutes or until soft.

    Puree tomato and can juices.

    Place in a saucepan; bring to the boil and stir until reduced by two-thirds.

    Cool.

    Puree peas and beat in the tomato mixture, lemon juice, oil and garlic.

    Season with salt, pepper and cayenne.

    Cover and chill.
