- 1 medium-size meaty beef bone
- 10 c. cold water
- 1/2 c. onions, chopped
- 1 c. celery, diced
- 2 c. carrots, diced fine
- 2 Tbsp. oil
- salt to taste
- freshly ground black pepper to taste
- 1 Tbsp. chopped parsley
Directions

1Into a 4-quart container, with a heavy bottom, put split peas, beef bone and cold water.

2Place container over medium heat and bring to boiling point.
