Split Pea Soup

Ingredients

  • 8 c. water
  • 1 lb. dried split peas
  • 1 lb. ham without bone in or 2 lb. smoked ham
  • 1 medium onion (1/2 c.)
  • 1 tsp. salt
  • 1/4 Tbsp. pepper
  • 2 medium carrots, cut in 1/2-inch pieces
  • 2 medium stalks celery, cut in 1/2-inch pieces

Directions

    Boil peas for 2 minutes; remove from heat and let stand 1 hour.

    Rinse well.

    Add to peas, ham, onion, salt and pepper. Cover and simmer 1 hour or until done.

    Cut ham from bone and simmer until vegetables are done (45 minutes).
