- 2 stalks celery
- 2 onions, chopped
- 1 lb. green split peas
- 1/4 tsp. thyme
- 2 bay leaves
- salt to taste
- crushed red peppers to taste
- 1 ham hock or any leftover ham or ham bone
Directions

1Boil hard for 20 minutes.

2Then simmer until peas are done which should be 2 hours.

3Serve with hot corn bread and butter. Serves 6.
