Split Pea Soup

- 1/4 lb. bacon
- 1 c. each: chopped onion and thin sliced carrots
- 1 lb. dried green split peas, rinsed and picked over
- 6 c. water
- salt to taste (about 2 tsp.)
- few shakes pepper
Directions

1Fry bacon until crisp.

2Set aside.

3Saute onions and carrots in drippings for about 10 minutes, stirring often.

4Stir peas into water; add carrots and onions and bring to a boil.

5Cover and simmer for one hour or longer, until tender.

6Add salt and taste. Garnish with reserved bacon.

7Freezes well.

8Makes about 2 quarts.
