Split Pea Soup

Ingredients

  • 1 pkg. split peas
  • 1 1/2 c. onions
  • 1 c. diced celery
  • 1 ham bone
  • 1 c. carrots
  • pepper to taste

Directions

    Wash peas; look for floating things and pebbles.

    Fill a pot with 6 cups of water; add 2 cups of peas.

    Boil for 2 minutes. Cover and let stand for 1 hour; drain.

    Add ham bone, onions and 4 cups water.

    Bring to a boil and simmer 1 1/2 to 2 hours.

    Remove bone; cut off ham and add some additional pieces.

    Return to soup and add carrots and celery; season to taste.

    Cook, uncovered, for 30 to 40 minutes.

    Cool soup and remove fat.

    Reheat and serve.
