Split Pea Soup

Ingredients
- 1 pkg. split peas
- 1 1/2 c. onions
- 1 c. diced celery
- 1 ham bone
- 1 c. carrots
- pepper to taste
Directions

1Wash peas; look for floating things and pebbles.

2Fill a pot with 6 cups of water; add 2 cups of peas.

3Boil for 2 minutes. Cover and let stand for 1 hour; drain.

4Add ham bone, onions and 4 cups water.

5Bring to a boil and simmer 1 1/2 to 2 hours.

6Remove bone; cut off ham and add some additional pieces.

7Return to soup and add carrots and celery; season to taste.

8Cook, uncovered, for 30 to 40 minutes.

9Cool soup and remove fat.

10Reheat and serve.
