- 1 cup split peas
- 5 cups water
- 5 bouillon cubes
- 1/2 lb Italian sausage
- 1 cup celery, chopped
- 1 medium onion, chopped
- 3 cloves, garli finely chopped
- 1 small red bell pepper, chopped
- 1/4 cup dry red wine
- salt and pepper, to taste
- grated parmesan cheese, for garnish
Directions

1Combine cubes, peas, water and salt and pepper. Bring to boil and simmer for 30 minutes. stirring occasionally.

2Brown sausage, celery, onion, pepper and garlic, add to soup and add wine.

3Simmer for 15 minutes to blend flavors and top with parmesan cheese.
