- 1/2 sponge, cut in half horizontally
- Filling
- 1 1/2 tablespoons gelatine dissolved in
- 1/4 cup water
- 500g block PHILADELPHIA Cream Cheese, softened
- 1/2 cup caster sugar
- 1/4 cup lemon juice
- 1/2 cup mango puree Whole Foods 2 ea For $4.00 thru 02/09
- 1/2 cup passionfruit pulp
- 1/2 cup cream, lightly whipped
- Topping
- remaining half sponge
Directions

1Place sponge slice in the base of a 18cm spring form pan.

2Stir gelatine into cold water, heat in saucepan (or microwave on HIGH for 30 seconds) until dissolved.

3Beat Philly* until smooth, add sugar, lemon juice, mango puree, passionfruit pulp, whipped cream and gelatine mixture.

4Pour into prepared base.

5Allow to chill until firm.

6Top with remaining half sponge, cut into wedges.

7Dust with sifted icing sugar.
