  • 3 c. milk, scalded
  • 1 c. white corn meal
  • 1 Tbsp. sugar
  • 3 egg whites, beaten stiff
  • 1 Tbsp. salt
  • 1 Tbsp. butter
  • 3 egg yolks (unbeaten)

Directions

    Gradually add corn meal to milk while beating.

    Stir until it thickens.

    Remove from fire and cool slightly.

    Add sugar, salt and butter.

    Add egg yolks, one at a time, beating well after each addition.

    Fold in egg yolks, one at a time, beating well after each addition.

    Fold in egg whites.

    Place in a greased casserole. Bake at 275° for 35 to 45 minutes or until brown on top.

    Serve immediately with melted butter.
