  • 2 c. whole milk
  • 1/2 c. white corn meal
  • 1 tsp. salt
  • 2 Tbsp. butter
  • 1/2 tsp. baking powder
  • 2 eggs, separated

    Preheat oven to 400°.

    Put a well-greased 2-quart baking dish in the oven to heat.

    In a medium saucepan, boil the milk. Gradually stir in the corn meal; the mixture should be stiff.

    Add the salt and butter.

    Turn off the heat and add the baking powder. Beat the egg yolks and add them to the batter.

    Beat the egg whites until stiff; fold into batter.

    Pour the batter into the hot, greased baking dish.

    Bake for 35 to 40 minutes, until spoon bread is firm in the middle and brown on top.
