- 1 pt. milk
- 6 Tbsp. butter
- 1 c. cornmeal
- 1 tsp. salt
- 3 eggs, room temperature
Directions

1Scald milk (do not boil).

2Stir in butter, cornmeal and salt. Cook, stirring constantly, until cornmeal comes away from sides of pan and thickens.

3Set aside and cool to lukewarm, add beaten egg yolks and mix well.

4Fold in stiffly beaten egg whites.

5Bake in a greased and floured 2-quart baking dish at 375° for 1 hour or until golden brown.
